These beautiful tasty tarts are available in boxes which hold one dozen.
Have you ever sat down at your grandmother’s table and had a piece of pecan pie so good that it just melted in your mouth? Well, I have on several occasions, and the other day, I ate a pecan tart that brought back all of those sweet memories.
In 2002, Harvey was making a lot of pecan pies. Some were to serve in the restaurant, but most were to be used in his catering business. One of his regular purchases was for several cases of 10” pie shells which came packed in individual aluminum tins. The shippers accidentally included a case of 4” tart shells, which Harvey was not prepared to use. Harvey notified the shipper for instructions about returning the case of tart crusts, but the shipper was not willing to pay for return shipping. The shipper told Harvey to throw them away.
Harvey did not want to waste the tart shells, so having some spare time; he decided to try making some miniature pecan pies. He started with his original pecan pie recipe; unfortunately, the smaller pies did not turn out as good as the larger pies. Harvey began to experiment with different portions, temperatures and cooking times, and after several tries, he duplicated the taste of the larger pies. Since he still had a lot of tart shells remaining, he made up a batch and used them as dessert in the Humble Inn. The customers loved them and they were such a hit, that Harvey made some more. They did not last very long either, so Harvey made some more.
All of a sudden, Harvey had a hit on his hands. Everyone who tried one of the pecan pie tarts wanted to take some home. A few of the local businesses wanted some to sell at their establishments. One of the stores in Dayton sold some pecan tarts to a traveling salesman from Lumberton, Texas. The salesman immediately approached Harvey about buying several cases a week for him to resale between Dayton and Louisiana. The hurricane ruined that man’s business, but by then, the tarts had been seen by many people and numerous stores were interested.
Harvey’s pecan pie tarts are now available as far south as the Valley and as far north as Dallas.

These Tarts are delicious anyway that you want to eat them.
Since they last for months in the freezer, my favorite way is to go to the freezer and remove a Pecan Tart from the box that is always available.
Remove the plastic wrapper which keeps it fresh, take the tart out of the little aluminum pie plate, and place it in a small bowl. I then stick it in the microwave for about 30 seconds and top with vanilla ice cream.
This is so good, you can't believe it.
